Garlic Tomato Grilled Cheese [Tasty Thursday]

Garlic Tomato Grilled Cheese

A booth served this fairly delicious sandwich at FloydFest this year. When I got home, I had to figure out how to make it. Here's my interpretation - doesn't take more than 15-20 minutes total. Enjoy!

Ingredients (above):

1 tsp minced garlic (I LOVE garlic, so you might go a little or a lot lighter. Garlic powder can be substituted here.)
2 tbsp butter, margarine, or spread
2 slices cheese
2 slices crusty fresh bakery bread (If using sandwich bread, halve the other ingredients)
2 slices tomato

Directions:

1. Heat the frying pan or grill. (I found it worked better with the grill, but it might not work that well with spongier sandwich bread.)
2. Thoroughly mix the minced garlic and butter (or substitute).

3. Spread the garlic butter mix on the inner face of the bread.
4. Place the cheese on the bread, then the tomato on top of it. If the cheese sticks out over the bread, tear it off and put that on top of the tomato.

5.
Stack one side on top of the other. Make sure there's not too much overlap on the cheese slices.
6. Spread the garlic butter on the outer face of the bread.
7. Put the sandwich on the heated grill or pan. Flip frequently for 5-7 minutes.

8. Cut diagonally and enjoy!

  1. This sounds delicious! I'm going to try melding it with the usual grilled cheese that I make: pesto and provolone.
